Raspberry cheesecake cookies🍓🍰✨                                                                                     Recipe:                                                            Ingredients  Raspberry jam -1 1/2 cups raspberries (180g) -1/4 cup granulated sugar (50g) -1 tsp lemon juice -1 tsp water -1 tsp cornstarch mixed with 2 tsp water Raspberry cookies -2 cups + 2 Tbsp all-purpose flour (255g) -3/4 tsp cornstarch  -3/4 tsp baking powder -1/4 tsp baking soda -1/2 tsp salt -3/4 cup unsalted butter, softened (169g) -3/4 cup granulated sugar (148g) -1/4 cup light brown sugar, packed (53g) -2 tsp lemon zest -1 egg, room temperature  -2 tsp vanilla -1 cup white chocolate chips (170g) -3/4 cup frozen raspberries (about 90g) Cream cheese frosting -6 oz cream cheese, softened (170g)  -5 Tbsp unsalted butter, softened (70g) -1 tsp vanilla -Pinch of salt -2 cups powdered sugar (227g) Instructions  For the raspberry jam: 1. In a small bowl, mix 1 teaspoon cornstarch with 2 teaspoons water. Set aside. 2. In a small saucepan, add the raspberries, sugar, lemon juice, and water. Simmer over medium heat for 3 to 4 minutes, stirring often and crushing the raspberries. Then, add the cornstarch mixture and continue stirring for about 1 minute. Remove from heat and set aside to cool. For the raspberry cookies: 1. Preheat oven to 350°F and line 2 baking sheets with parchment paper. 2. In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Set aside. 3. In a small bowl, add granulated sugar and lemon zest. Rub together with your fingers until it looks like wet sand.  4. In a large bowl, beat together softened butter, brown sugar, and the lemon sugar until light and fluffy. 5. Mix in the egg and vanilla until combined. 6. Mix in the dry ingredients until just combined. 7. Gently fold in the white chocolate chips and frozen raspberries. Don’t let the dough sit too long to prevent it from getting too wet.  8. Scoop the dough with a 3 Tbsp cookie scoop and place 2 inches apart on the baking sheet. 9. Bake for 10-12 minutes, or until the edges are set and the centers still look slightly soft. Let the cookies cool before frosting.  For the cream cheese frosting: 1. In a medium bowl, beat the cream cheese, butter, vanilla, and salt until smooth and combined. 2. Add the powdered sugar and mix until combined. 3. Transfer the frosting to a piping bag and pipe a swirl on the cooled cookies. Spoon cooled raspberry jam on top.  4.
