Soak the rice for 5–6 hours or overnight. Blend it for about 3 minutes until there is no sandy texture. Let the batter sit for 30 minutes to 1 hour, then discard some of the water on top to thicken it. (You can always adjust the thickness by adding more water or letting it sit longer and removing more water from the top.)
Add salt and oil, or any spices and herbs you like. Pan-fry the wrapper without oil, then let it cool completely before wrapping the meat and frying it. This is so easy to make and I didn’t expect it to turn out so crunchy.
This method was inspired by Indian neer dosa after you guys gave me so much helpful advice when I cooked my rice dish. We normally make spring roll wrappers with all-purpose flour but this time I wanted to go with a gluten-free option using only rice. Of course you can use rice flour instead and add some cornstarch if you want an extra-crunchy texture.
