How to Make Seared Scallops & Brown Butter Pasta 💌💌 INGREDIENTS: 6 large U10 scallops, fresh 1 tbsp neutral, high-smoke point oil 2 tbsp unsalted butter 3 tbsp white miso paste 250g spaghetti 1/2 bunch chives 1/2 lemon Fine sea/kosher salt to taste Toasted breadcrumbs (I made my own, but store-bought works fine too!) INSTRUCTIONS: 1. Ideally 6-8 hours before cooking, remove your scallops from their packaging, pat them dry, and leave them uncovered in the fridge on a wire rack. 2. When ready to cook/serve your scallops, begin by getting your "mise en place" ready. Finely chop your chives, dice your butter into cubes, and have your miso paste ready. 3. Bring a large pot of salted water to a boil. At the same time, pre-heat a large, heavy-bottom pan (stainless steel or cast iron) over medium-high heat. Season your scallops generously with salt. You can start cooking your spaghetti at this time as per package instructions. 4. Be sure to give your pan some time - a good 30-60 seconds to properly pre-heat. When you add your oil to the pan, it should be just on the verge of smoking. Whichever side of your scallops is nicer (i.e. the "presentation side"), place that side of the scallop into the pan. Gently press your scallops into the pan with a spoon to make sure they are in good, even contact with the pan. At this point, turn the heat of your pan down to medium. Let your scallops cook like this for 2-3 minutes. Do not touch the scallops! Let them develop that golden sear - unless you get the sense that they are starting to burn, in which case you can release them from the pan. You will know they are ready to flip when A) you see a nice golden sear developing around the edge of your scallops, and B) the top of the scallops are slightly warm to the touch. 5. At this point, flip your scallops, and add your butter to the pan. Once the butter is foaming, start basting the butter over your scallops. Continue for 60-90 seconds, then remove your scallops from the pan. However, be sure to leave all that nicely browned butter in the pan! 6. Add 1-2 small ladles of pasta water to your scallop pan, along with your miso paste. Whisk everything over medium heat as the miso dissolves. You want the sauce to reduce until it is thick enough to coat the back of a spoon. When your spaghetti is al dente, add it to your pan, and toss everything to combine. When your sauce is clinging nicely to your noodles, with a creamy consistency, remove the pan from the heat and add your chives + a squeeze of lemon juice to finish. Plate your pasta and top with breadcrumbs & your scallops. Enjoy! #scallops #brownbutter #pasta #homecooking #Recipe
