Turn the corn pulp into a cake! Look into pastel de elote!! So yummy! I worked in a bakery where we’d make corn cake, then put sugar on top and caramelize it.

The reason she let it cool before adding butter extract is because if you add an extract directly to molten hot sugar it's going to lose the flavor in the extract as it boils off too quickly. That's why candy makers don't add flavorings and color to things like pulled sugar for candy canes until it's cooled off some
