Making brain healthy food that actually tastes good!🙌 This spanakopita is: ✔️Packed with brain healthy nutrients ✔️Mediterranean diet approved ✔️Actually delicious ✔️Family will eat it ✔️Easy to make INGREDIENTS: 1 pound or 500 g frozen spinach thawed 1 medium onion, finally chopped 2 tablespoons olive oil plus more for brushing the Phyllo 3 tablespoons chopped parsley 2 tablespoons chopped dill 10 to 12 oz (280 to 340 g) crumbled feta cheese 3 eggs 10 phyllo sheets INSTRUCTIONS: 1. Preheat oven to 350°. 2. Heat a medium pan with 1 tablespoon olive oil. 3. Sauté the onions until soft. 4. Squeeze the water out of your spinach and add it to the pan. 5. Sauté the spinach with the onion for a few minutes. 6. Add the herbs and sauté for 2 to 3 minutes more. Transfer to a bowl and let it cool. 7. In a small bowl beat the eggs. 8. Add the eggs and feta to the cooled spinach and add the other tablespoon of olive oil mix so that all the ingredients are blended. 9. Brush a pan that is about 15 x 10“ with olive oil. 10. Place a sheet of phyllo in the pan and brush with olive oil. Repeat with four more phyllo sheets. 11. Spread the spinach mixture evenly 12. Cover with five more phyllo sheets, brushing each one with olive oil. 13. Score the top with a knife to make 12 pieces. 14. Bake for about 40 minutes until the phyllo is golden. 15.
