@sourabhhanumant: A perfect afternoon ft @HalfPastChai @hallie patel @Suketu Patel Potato Masala Sandwich 🥪 Ingredients • 3 cups boiled potatoes, mashed • 2 tbsp oil • 1 tsp cumin seeds • 3-4 garlic cloves, chopped • 2 green chilies, chopped • 1 onion, finely chopped • A handful of curry leaves • ¼ tsp hing (asafoetida) • ½ tsp turmeric powder • Salt to taste • 1 tsp coriander powder • Sourdough bread • Mint chutney • Store-bought dry garlic chutney Instructions 1. Heat oil in a pan and add cumin seeds. 2. Add garlic, green chilies, onion, and curry leaves. Sauté until the onions soften. 3. Stir in hing, turmeric, salt, and coriander powder. 4. Add the boiled potatoes and mix everything together until well combined. 5. Spread mint chutney and dry garlic chutney on slices of sourdough bread. 6. Add a generous layer of the potato masala and close the sandwich. 7. Toast both sides until golden and crispy. 8. Slice and serve hot.
