I do 350 water, 100 starter, 500 flour and 12 g salt. The best tip I can give is just keep on trying. I don’t think you have enough water in your recipe

Girl get aggressive with those folds…. Wet hands help with the sticky stuff…. Also when you get more advanced you can start feeling your dough and know when you need more flour or water… it gets easier. How old is your starter?

I too am a newbe. I just made my third leaf and it turned out fantastic. The only thing I did different was I did my gluten build up before first rest. I kneaded it until it was smooth about 7 minutes to where it wasn't sticking to the bowl or my hand. Then proceeded with 4 stretch and folds 30 minutes apart. Best loaf yet.

1. Dampen your hands next time. 2. Clean the sides of the bowl to make sure most are incorporated in the dough.
