Add the chicken and onion and cook for 5 minutes. Stir in the paprika and rice. Pour in the stock and add the capsicum if using. Bring to a simmer, cover, and cook on low for 18–20 minutes. Stir through the peas and cook for another 5 minutes. Rest for 5 minutes, then fluff the rice with a fork. That’s it.
