මාළු චීස් රොටි | Fish and cheese stuffed Roti 🇱🇰 This is a variation of our famous sri lankan coconut roti aka pol roti. Hope you will enjoy it. (Thank me later) Ingredients (4 rotis) For the dough - All purpose flour or Atta flour | පිටි හෝ ආටා පිටි 200g (i used atta flour. You may use whatever you prefer) - Grated fresh coconut | ගාගත් පොල් 130g - Salt | ලුණු 1/2 Tsp - Unsalted Butter | ලුණු රහිත බටර් 1 tsp (optional) - Lukewarm Water | මද රස්නෙ වතුර (as needed) For the filling,  - Cooked fish or boiled fish | කලින් උයපු මාළු හෝ තම්බාගත් මාළු 90-100g - Chopped Onion | කුඩාවට කපාගත් ලූනු 1/2 - Chopped Garlic | කුඩාවට කපාගත් සුදු ලූනු 2 cloves  - Chopped Green chillies | කුඩාවට කපාගත් අමු මිරිස් 1 - Chopped curry leaves | කුඩාවට කපාගත් කරපිංචා  - Pandan leaves | රම්පෙ (small piece) - Chilli flakes | කෑලි මිරිස් 3/4 tsp - Salt | ලුනු (per taste) - Tomato ketchup | තක්කාලි සෝස් 1/2 tsp - Lime juice | දෙහි යුෂ 1/4 tsp - Cheese | චීස් (mozzarella)  Method,  - First mix all the ingredients mentioned in for roti. Add water little by little. Make a non sticky dough. Keep it close for 15-30 mins. - Make the filling by adding oil to a pan and sauté onions, garlic, chilli, curry leaves, pandan.let it cook for 1-2 min.Add fish and mix well.  - Add spices and mix well.  - Finally add ketchup and mix.  - Turn off the heat and let it cool slightly.Then add lime juice and mix well.  - Next divide the dough into 4 equal portions.  - Apply some oil on the cutting board or the surface you use.Flatten one dough.Place the fish mixture and cheese in the center. - Carefully fold the dough again into a ball and make roti by flattening it again. - Cook well until its golden brown.
