Cut the following ingredients into julienne: beef, capsicum, carrots, onions. Cut shiitake mushroom into slices 2. Marinade beef in 1 large garlic clove, 1 tbs soy, 1 tbs brown sugar, 1/4 tsp pepper, 1 tbs sesame oil (15-20min whilst you prep and cook other steps) 3. Stirfry the vegetables - onions: 2-3 min on medium, do not brown, salt and pepper - shiitake mushrooms: ~3min medium high til brown, salt and pepper - carrots: ~1.5 min on medium high, salt - capsicum: ~1.5min on medium high, salt - spinach: Blanche for 30 sec, and straight into an ice bath. Then squeeze out the water, season with sesame oil, salt, pepper - beef: 1.5-2min on high heat 4. Whisk 2 eggs and make a thin omelette over medium heat. Season with salt and cut into thin ribbons 5. Cook sweet potato glass noodles in boiling water for 8min. Drain and rinse under water and shake off the excess. Using scissors, cut the noodles so they’re easier to eat. 6. For the noodle sauce, mix 5 tbs soy, 2 tbs sesame oil, 1 tbs brown sugar, 1.5 tbs honey, black pepper. 7. Heat the sauce over medium, and add in the noodles and mix well until evenly coated. 8. Mix all the items together and sesame with roasted sesame seeds. Enjoy!
