All about the Sauce, 43 of 50. My favourite Garlic Mayonnaise, warming and subtle in flavour but packing a bit savoury umami punch. Very addictive especially with salty chips/fries. 15 garlic cloves 250ml neutral flavoured oil so sunflower/vegetable/avocado etc 1 bay leaf Few sprigs of thyme Few sprigs of Rosemary 2 large egg yolks 1 tsp Dijon mustard Squeeze of lemon juice 1 heaped tsp white miso paste or 1 tsp salt Handful of flat parsley Few chopped chives 1. Gently cook the garlic in the oil with herbs for 45 mins, ideally around 80c. Strain off the oil and set aside to cook then remove the herbs their work here is done. 2. Crush the garlic cloves and set to one side 3. Add the egg yolks, mustard, lemon and miso or salt to a bowl and whisk. Stream in the garlic oil and whisk constantly until a mayonnaise forms 4. Add the garlic, parsley and chives. Season to taste with salt and lemon juice 5. Eat mayonnaise and be happy #sauce #sauces #cooking #Recipe #garlic
