Papa Rellenas 🇵🇷  Ingredients :  2 lbs potatoes  1 tablespoon cornstarch  1 egg lightly beaten 1 tablespoons butter  Picadillo filling  Salt  Oil for frying  Filling  3 lb ground beef  1/2 cup sofrito  8 oz tomato sauce  1 onion diced  1 tablespoon sazon  1/2 teaspoons cumin 3/4 teaspoons oregano  3/4 teaspoon garlic powder  3/4 teaspoons onion powder  1/2 tablespoons salt or to taste  Instructions for filling :  Grab a pan and set heat to high then add ground beef and cook till browned, now remove some of the fat and set heat to medium. Add onions and stir, cook tell translucent Add sofrito, seasonings, tomato sauce mix well cook for like 5 minutes while stirring to finish this simple delicious filling and can be used for Puerto Rican hot dogs, empanadas and more. Made 2 1 quart containers.  Instructions for papas :  Peel potatoes and cut into small chunks.  Grab a pot add water and bring to a boil, add salt next add potatoes and cook till soft.  Drain and set aside till cool.  Once cooled add cornstarch, egg lightly beaten, butter, little salt to taste if needed only and smash till well combined.  Grab some of the mash potatoes and try to flatten on your hand then add about 1 tablespoon of filling or to preference some make them small or big. Form into a ball then add to whisked egg then breadcrumbs and so on with the rest. I then place them into the freezer for 10 to 15 minutes.  Deep fry the papa rellenas while oil is hot 350 degrees. Cook for about 5 minutes turning and flipping as needed till nice and golden all around. Served with mayoketchup. Made 4 large papa rellenas so double recipe if needed.
