🤤 Tender mutton, bold spices, and that perfect clingy gravy… this is comfort food at its finest! 🍖✨ Ingredients * 750g mutton, cut into pieces * 3 medium onions, finely sliced * 2 tomatoes, chopped * 2 tbsp ginger-garlic paste * 2 green chilies, slit * ½ cup plain yogurt * 3 tbsp oil or ghee * 1 tsp cumin seeds * 1 bay leaf * 1-inch cinnamon stick * 3 green cardamoms * 4 cloves Spice Powder * 1 tsp turmeric powder * 1½ tsp red chili powder * 1 tsp coriander powder * ½ tsp cumin powder * 1 tsp garam masala * Salt to taste Fresh Garnish * Handful fresh coriander, chopped * 1 tsp crushed black pepper (optional) Method 1. Heat oil or ghee in a heavy pot. Add cumin seeds, bay leaf, cinnamon, cardamoms, and cloves. Sauté until fragrant. 2. Add sliced onions and cook until deep golden brown. 3. Stir in ginger-garlic paste and green chilies. Cook for 1–2 minutes. 4. Add tomatoes, turmeric, chili powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the oil starts separating. 5. Add yogurt and mix well. Cook for 2–3 minutes. 6. Add mutton and bhuna (roast) on medium-high heat for 8–10 minutes, stirring frequently until the meat is well coated and slightly browned. 7. Add 1 to 1½ cups hot water. Cover and cook on low heat for 45–60 minutes (or pressure cook for 5–6 whistles) until the mutton is tender. 8. Once cooked, uncover and cook on medium-high heat, stirring often, until most of the liquid reduces and a thick, light gravy coats the mutton. It should not be completely dry. 9.
