place the ponytail kimchi into a wide skillet or shallow pot. add the kimchi brine, anchovy broth, and a few spoonfuls of the sauce. bring to a simmer and cook for 8–10 minutes, until the radish pieces begin to soften.
layer the sliced onions over the kimchi, then place the salmon fillets on top. spoon more of the sauce mixture over the salmon.
cover and let simmer until the salmon is just cooked through, about 10–12 minutes depending on thickness. occasionally uncover and spoon the braising liquid over the salmon to help it absorb flavor. the liquid will reduce and thicken slightly as it cooks.
drizzle with sesame oil and sprinkle with sliced green onions before serving.
