Çeşm-i Nigar - a soup with a name as beautiful as its meaning✨ Çeşm-i Nigar means “eyes of the beloved” a poetic name for this traditional Ottoman soup. Once enjoyed as part of Ottoman cuisine, today I wanted to bring this beautiful piece of Ottoman history into my kitchen🧡 Ingredients * 1 onion * 1 tbsp flour * 1 cup red lentils * ½ Turkish tea glass (60 ml) olive oil * 1 teaspoon salt * 6 cups (1,200 ml) water For the milk and egg mix (terbiye) * 1 Turkish tea glass (125 ml) milk * 1 egg yolk * Juice of ½ lemon For the topping * 1 tablespoon butter * 1 teaspoon dried mint * 1 teaspoon red pepper flakes 1. Wash the lentils thoroughly and drain them. 2. Heat the olive oil in a pot and add the finely chopped onion. Sauté until the onion becomes soft and lightly golden. 3. Add the flour and continue cooking until you can smell the cooked flour (2-3 mins) Keep the heat moderate and stir continuously to prevent the flour from burning. 4. Add the washes lentils and stir. Then add the hot water and leave the soup to cook until the lentils become very soft and break down. 5. Meanwhile, prepare the egg and milk mixture by whisking together the milk, lemon juice, and egg yolk. The lemon juice and milk used should be at room temperature. 6. Once the lentils are completely soft, turn off the heat and blend the soup until smooth. 7. Take about one ladleful of the hot soup and slowly add it to the milk and egg mixture while whisking. This gently brings the mixture up to temperature and prevents the egg from curdling. 8. Slowly pour the warmed mixture into the soup while stirring continuously. 9. Turn the heat back on and let the soup simmer for a few minutes. Then add a bit of salt. 10. Give it one final stir and remove it from the heat. 11. For the topping, melt the butter in a small pan. Add the red pepper flakes and dried mint and briefly heat until fragrant. 12. Drizzle the butter and spice mixture over the soup. Serve hot and enjoy! #ottoman #turkish #soup #EasyRecipes #fyp
