@stefano: I think the fact that as soon as a dish gets to the table, everyone gets the phone out for the picture, has made the attention to aesthetics so important. Was probably a lot easier 15 years ago were the look was important but not as much as today

I was always taught in culinary school that the taste is most important. But everyone eats with there eyes 1st before there tongue. So how a dish looks can depict how someone perceives the dish to start of aswel.

You need to focus on both. The guest will judge the look before they taste. It’s important to make sure both are the best for each and every plate you send. You can’t be a serious chef if you only care about one over the other.
