Vodka pasta without the vodka 🍝 Yum! Recipe below ⬇️ #vodkapasta #dinner #eatingshow #eating #Recipe #fyp 2 tbsp olive oil or butter 2 shallots, finely chopped 3 garlic cloves, minced 1/2 tsp red pepper flakes (adjust to taste) 1/4 cup tomato paste 1 tbsp lemon juice or 1 tbsp white wine vinegar 1/2 cup heavy cream (or half-and-half) Salt and black pepper, to taste 1/4 to 1/2 cup grated Parmesan cheese (plus more for serving) 1/4 cup reserved pasta water 12 oz cooked pasta Optional: chopped basil or parsley for garnish Directions: 1.	Sauté the aromatics: In a large skillet over medium heat, heat olive oil. Add chopped onion and cook until soft and translucent, about 5 minutes. Add garlic and red pepper flakes; sauté 1 minute more. 2.	Tomato paste magic: Stir in the tomato paste and cook it down for 2–3 minutes until it darkens slightly and caramelizes. 3.	Add the acidity: Stir in lemon juice (or vinegar). This mimics vodka’s sharpness and cuts through the richness. 4.	Creamy transformation: Reduce heat to low and slowly stir in the cream. Simmer 3–5 minutes until the sauce is smooth and slightly thickened. Season with salt and pepper. 5.	Cheese it up: Stir in the Parmesan until melted. Add a splash of reserved pasta water if it needs thinning. 6.	Toss & serve: Add cooked pasta to the sauce and toss to coat. Serve warm with more Parmesan and fresh herbs if desired. Notes: For a non-dairy version, use coconut milk or cashew cream. For a deeper flavor, add 1/2 tsp of balsamic vinegar in place of lemon/vinegar. If you like it meaty, add crumbled cooked sausage or pancetta before the onions.
