I grew up eating this but I had no clue this was Puerto Rican until semi recently. I was taught to call it plantain lasagna 😆 I’ve made this once before for a friend’s house warming party but this time I decided to make the minis because I thought it’d be cute. Because the original recipe was for a whole Pastelón, I ended up with a ton of left over picadillo, so I’m halving the ingredients in the recipe. Ingredients: 6 Ripe Plantains 2 cup oil (to fry plantains) 1 lb ground beef 1/4 white onion, diced 1/4 green bell pepper, diced 1 tbsp recaito (I got mine premade but you can make your own) 2 cloves garlic 1 tbsp tomato paste 1/4 cup beef stock Spices: 1/2 tbsp adobo 1/2 tbsp sazon 1 tsp cumin 1 tsp black pepper 1 tsp onion powder 1 tsp oregano Instructions: 1. Prep plantains: Slice ripe plantains, fry until golden and soft, drain. 2. Make picadillo: Sauté onion, bell pepper, recaito and garlic in oil. Towards the end, saute tomato paste. (I didn’t do this in the video but this ideal). Add ground beef with seasonings, and tomato paste. Once beef is cooked through, add 1/4 cup of beef broth. Simmer until slightly saucy. 3. Assemble Piononos: Grease muffin tin. Wrap plantain in each cup. Cut off one part of the ends if too long. Pour a bit of egg mixture at the bottom. Layer with meat and cheese until the final layer. Add a bit more egg and then add final layer of cheese. 4. Bake: 350°F for 15ish minutes or until set, broil for a minute or 2 to brown the top
