Letting it thaw can soften the base and encourage ice crystal formation. * Use the Sorbet setting for the first spin. It runs at a lower speed than Lite Ice Cream, which means less processing and a denser texture. * Leave the sides alone. Scraping them down just mixes the icy bits back into the pint. There usually isn’t enough on the walls to affect the final result. * After the first Sorbet cycle, use the back of a spoon to gently press the mixture down. This helps compact the base and improves blade contact for the next run. * Choose Mix-In instead of Re-Spin. Mix-In operates at a lower speed, giving you more control over the final consistency. * Add mix-ins while they’re still frozen. Frozen add-ins won’t warm the ice cream as much, helping it stay thick.
