Recipe - 4 gold potatoes - 1/2 stick butter - 3 cups chopped mushrooms - 1 yellow onion - 2 sprigs of rosemary - 7-9 slices of bacon - 1/3 cup dry red wine - 1/3 cup soy sauce - 1/4 cup sweet sake - 2 tbsp oyster sauce Peel and cut your potatoes into smaller chunks. Steam or boil in heavily salted water until tender. Mash lightly. Not completely smooth. Sauté the mushrooms and onion in some olive oil. Add in 2 tbsp sake and allow it to completely absorb into the mushrooms. Add in the fresh herbs and cook for another 30 seconds. Add this mixture to the potatoes and combine. Allow the mixture to cool completely before forming it into a loaf and wrapping tightly in plastic wrap. Into the freezer for 20 minutes. Lay out your bacon on another sheet of plastic wrap. Lay the potato loaf on and wrap it tightly then wrap it as tight as possible in plastic wrap. Freezer for 10 minutes. Tie it together with butchers twine and optionally stick some fresh rosemary into the bacon. Bake at 390F until the bacon is crispy.
