If you like pecan pie, you have to try these salted maple pecan pie bars! They’re honestly better than traditional pecan pie — and way easier to make. Plus, they’re gluten-free, dairy-free, and refined sugar-free! Shortbread Crust 1 ½ cups almond flour ⅓ cup coconut oil, melted ¼ cup pure maple syrup ¼ teaspoon salt Pecan Pie Filling 2 eggs ⅓ cup coconut oil, melted ⅓ cup pure maple syrup 1 teaspoon pure vanilla extract ½ cup coconut sugar ½ teaspoon salt 2 cups chopped pecans Topping Flaky sea salt Instructions 1. Prepare the Crust: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper. In a medium bowl, mix together all the crust ingredients until a sticky dough forms. Press the dough into the prepared pan, using a piece of parchment paper to smooth it out and form a crust. Make sure it covers the entire bottom of the pan. 2. Make the Filling: In a large bowl whisk together the eggs, then add the melted coconut oil, maple syrup, vanilla, coconut sugar, salt, and chopped pecans. Mix until well combined. 3. Assemble and Bake: Pour the filling over the crust then bake for 25 minutes, or until the crust is golden and the filling is set. Remove from the oven and immediately sprinkle with flaky sea salt. 4. Cool and Chill: Allow the bars to cool completely at room temperature, then transfer to the fridge for several hours. 5. Serve: Once chilled, slice into bars and enjoy! Store leftovers in the refrigerator. #pecanpiebars #pecanpie #glutenfreedessert #dairyfreedessert #refinedsugarfreetreats
