Traditional British Faggots & Onion Gravy 🇬🇧 A classic British comfort food dating back to the 19th century, especially popular in the Midlands and Wales. These rich pork and liver meatballs are packed with flavor and served with a savory onion gravy. Ingredients – Meatballs • 400g pork belly • 150g pork shoulder • 400g pork liver (or 200g liver + 200g heart) • 1 large onion, diced • 2 cloves garlic, minced • 1 tbsp cooking oil • 1 tsp dried thyme • 1 tsp dried sage • 1 tsp celery salt • ½ whole nutmeg, grated • 150g fresh breadcrumbs • 3 tbsp flour Ingredients – Onion Gravy • 1 tbsp cooking oil • 50g butter • 1 small onion, finely diced • 2 tbsp flour • 500ml beef stock • 1 tbsp tomato purée • 2 tbsp Worcestershire sauce Method 1. Finely dice the onion and garlic. 2. Grind or finely mince the pork belly, pork shoulder, and liver. 3. Mix the meat with onion, garlic, herbs, celery salt, nutmeg, breadcrumbs, and flour. 4. Shape into large meatballs. 5. Bake at 350°F (180°C) for about 1½–2 hours until cooked through. 6. For the gravy, sauté onion in oil and butter until soft. 7. Stir in flour and cook for 1 minute. 8. Gradually whisk in beef stock. 9. Add tomato purée and Worcestershire sauce and simmer until thickened. 10.
