Mix the ground beef, rice, onion, parsley and seasonings. Arrange two eggplant slices in a cross shape, place the filling in the center and fold into bundles. Pour the tomato sauce into a baking dish and place the bundles on top. Cover and bake at 220°C for 35–40 minutes. Top with mozzarella and chili flakes, then bake uncovered for 8 minutes until golden.
