leaving port for open ocean, you can watch the shore disappear from the bottom upward. Returning to port from open sea and you can watch the shoreline reappear from the top downward. Argue all you want to. You can test this scenario for yourself and I recommend you do. 🪩

doesn't water stay straight at the top? like if you take a glass that's filled halfway with water and you tilt that glass 45° degrees one way, the water at the bottom will contour to the change in the bottom of the glass but the water on the top will still be straight. so doesn't the water on the top always run straight and fill in the different heights. the difference in the water is not relevant. the curvature of the earth is on the bottom of the ocean

The important point is that this does not mean there is a 379-foot hump in the middle of the bridge. The bridge itself was built to follow the Earth's curvature. Engineers set each pier vertically (toward Earth's center), and the roadway gradually curves downward at a rate that's too small to notice with your eyes.
