High-protein breakfast bagels using British Lion Eggs 🥚✨ These eggs are amazing - naturally high in protein and produced to the highest food safety and quality standards in the UK! @egg_recipes This veggie-packed frittata is perfect for meal prep, busy mornings and kids’ lunch boxes, and pairs so well with a golden herby bagel plus a drizzle of hot honey 🤍 Simple, nourishing and so versatile - exactly how breakfast should be. Ingredients⬇️ 8 British Lion Eggs 1 tub light cottage cheese 1 red pepper, finely diced 1 orange pepper, finely diced 2 spring onions, sliced 100g cherry tomatoes, halved 2 large handfuls spinach, chopped 2 tbsp mixed dried herbs 1 tbsp Cajun seasoning Salt and black pepper, to taste Bagels 6 bagels, sliced 6 slices mozzarella Herby olive oil (olive oil mixed with dried herbs) Hot honey, for drizzling Method⬇️ Preheat the oven to 180°C (160°C fan). Lightly grease a large baking dish or tray. Whisk the eggs and cottage cheese together until mostly smooth. Season with salt and pepper. Stir through the peppers, spring onions, cherry tomatoes, spinach, mixed herbs and Cajun seasoning. Pour the mixture into the prepared dish and spread evenly. Bake for 30–35 minutes, or until set through and lightly golden on top. Allow to cool slightly, then slice into 6 portions. Assemble by adding a slice of frittata to each bagel. Top with a slice of mozzarella, drizzle with hot honey and a little herby olive oil, then bake again for 5-10 minutes until golden. Storage and reheating⬇️ Fridge Store cooked frittata slices or assembled bagels in an airtight container for up to 4 days. Freezer Wrap individual frittata slices or full bagels tightly, or store in a freezer bag. Reheat Microwave: 60–90 seconds from chilled, 2–3 minutes from frozen. Air fryer: 160°C for 6–8 minutes - great for keeping the bagel crisp. Perfect for meal prep, busy mornings or popping into lunch boxes 🥪 #britishlioneggs #eggrecipes
