๐Ÿ“๐ŸซSpicy Berries Salad This is a little sweet, sour, and spicy and so good. I love a healthy summer salad, and fruit salads are just so clutch this time of the year. We have some amazing local blueberries in season nearby which reminded me to make this for family last week. Its one of my favorite recipes in my Shredhappens cookbook for a reason because its a little fun and surprising. The sweet berries soak up the zesty, spicy dressing so well, so its got a little tart, sweet, and spicy. Perfect for a summer barbecue, potluck, or picnic, and ready in minutes. Top it with fresh mint, let it chill for a bit (thats important, its gotta be cold!), and every bite bursts with flavor. INGREDIENTS: For the dressing: 2 tbsp finely chopped fresh mint, plus extra for garnish 1 large lemon (zest and juice) 1 lime (zest and juice) 2 tbsp powdered monk fruit sweetener or powdered sugar 1 tbsp chili lime seasoning, plus extra for garnish 1/2 to 1 jalapeno, finely minced (de seed for less heat) 1/4 to 1/2 tsp pain hot sauce or sriracha For the salad: 10-12 oz strawberries, quartered -8 oz raspberries -8 oz blueberries -8 oz blackberries Here is how I made it: 1.In a small bowl, combine mint, lemon juice & zest, lime juice & zest, monk fruit sweetener, chili lime seasoning. Add minced jalapeรฑo and hot sauce gradually, tasting as you go until you reach your preferred level of heat. 2.In a large bowl, combine COLD strawberries, raspberries, blueberries, and blackberries with the dressing. Fold gently until evenly coated. 3.Garnish with extra chopped mint and chili lime seasoning. 4.Serve right away, or refrigerate 30-45 minuts to let the flavors marinate for extra kick.
