🥗 Chick-fil-A Kale Crunch Salad (Copycat)
Ingredients:
• 2 cups curly kale, chopped
• 1 cup green cabbage, thinly sliced
• 3–4 tbsp roasted sunflower seeds (or chopped almonds)
• Pinch of salt
Dressing:
• 3 tbsp olive oil
• 2 tbsp apple cider vinegar
• 1½ tbsp Dijon mustard
• 1½–2 tbsp honey
• ¼ tsp salt
• Black pepper, to taste
Directions:
1. Add the kale to a large bowl with a pinch of salt and massage for 30–60 seconds until softened.
2. Add the sliced cabbage and sunflower seeds.
3. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
4. Pour the dressing over the salad and toss until evenly coated.
5. Let the salad sit for 10–15 minutes before serving for the best flavor.
Store in the fridge for easy lunches throughout the week. Enjoy!
