You should never use fresh egg pasta with carbonara. The sauce gets to heavy. The original recipe asks for grano duro and water pasta only.

that’s perfect, but the pasta that we use is mezze maniche or spaghetti and the guanciale must be cut a bit longer. it looks delicious 😊

You can’t beat fresh pasta! I would make this with the exclusion of the pork since we don’t eat that I’m thinking I would sub out some mushrooms in its place
