One of the best recipes we’ve ever tried! We LOVE butter chicken and have made it before but this was authentic… delicious!  Adapted from one of our favorite chefs, @erinscozykitchen She is a mad genius!!! Butter Chicken + Cheesy Garlic Naan  CHICKEN MARINADE
4 lb chicken thighs, cubed
2 tbsp grated garlic
2 tbsp grated ginger
2 cups Greek yogurt
2 tbsp lemon juice
1 tsp paprika
1 tsp turmeric
2 tsp cumin
1+ tbsp Kashmiri chili powder
2-3 tbsp garam masala
4–5 tsp salt CURRY SAUCE
1/2 Cup ghee
2 large onions, diced
3 cups passata tomatoes
28 oz diced tomatoes
2 tbsp grated garlic
2 tbsp grated ginger
1½ cups cashews
3 cups heavy cream
2 tbsp coriander
3 tbsp garam masala
2 tbsp cumin
2 tbsp sugar
3 tsp salt
Hot water to thin CHEESY GARLIC NAAN
3 1/3 cups bread flour
1 cup warm water
1 tbsp sugar
1 instant yeast packet
1 tsp salt
120 g yogurt
3 tbsp olive oil
3 cups shredded mozzarella cheese GARLIC BUTTER
1 stick melted salted butter
½ tsp garlic powder
1/4 cup cilantro Marinate chicken for 1 hour.  Brown chicken in 2 tbsp butter/ghee and set aside.  In the same pan, sauté onions for a few minutes, add garlic, ginger, and spices. Mix. Add tomatoes, cream, cashews, and simmer 5–10 min. Blend smooth, return chicken to sauce, simmer until done. Mix naan dough ingredients in a bowl, dump out onto a lightly floured surface knead 5 min, cover, saran wrap, and rise 1 hour. Divide into 6 balls, roll them out, stuff with 1/2 shredded mozzarella, let rest for 10 minutes. Then gently roll out on a lightly flowered surface. Lightly oil, a medium high cast-iron skillet, cook 1–2 min per side. You know it’s done on the second side when it blows up like a balloon Brush with garlic butter. #butterchicken #indianfood #naan #cheesebread #dinner
