I mean there is also the fact that the people who do it are; Gollum(the OG), Bilbo(direct encounter with Gollum) and everyone who heard how Bilbo got the Ring from Gollum(to such a degree of accuracy that Merry/Pippin[can’t remember which specifically right now] can imitate Gollum well enough for an Orc to recognise who he was referring to.). Also if we’re being book pedantic then it should be “the precious”, “My Precious” is explicitly how Gollum Refers to himself when talking to Himself.

I always see it as Sauron temporarily talking through the person because it's got a really significant chunk of his very being in it, like how people say soulmates complete their being, the ring completes him and makes him whole
