225g lean beef mince
1 small red onion diced
1 small red pepper diced
1 small green pepper diced
1 tsp chopped garlic
1 tbsp fajita seasoning
1 tsp smoked paprika 
200ml passata
1 beef stock cube crumbled 
100-125ml pasta water
25g lightest cream cheese
40g half fat cheddar grated
20g red leicester cheese (can sub for more cheddar to reduce cals) 

Toppings (additional / optional 12 cals each):
1 tbsp fat free greek yoghurt 
5 jalapenos 
3 sprigs of fresh coriander  💕Start by bringing the pasta to boil in a large pan of salted water. Cook according to packet instructions. Reserve 100–125 ml of the pasta cooking water, then drain the pasta. 💕Add the diced onion, red pepper, and green pepper to a large frying pan. Cook for 4-5 minutes until softened. 

💕Add the beef mince to the pan with the vegetables. Cook until browned.
Stir in the chopped garlic, fajita seasoning, and smoked paprika, cooking for 1 minute to release the flavour.

💕Add the passata, crumbled beef stock cube, and the reserved pasta water.

💕Stir well and simmer for 3-4 minutes until slightly thickened.

💕Reduce the heat to low and stir in the lightest cream cheese until smooth.

💕Add the cooked pasta to the pan and toss well to coat.

💕Sprinkle over the grated cheddar and red Leicester. Leave on low heat covered to melt for a couple of minutes.
