Sweet Potato Filling • 1 1/2 cups roasted sweet potato purée • 2 tbsp white miso • 2 large eggs • 3/4 cup full-fat coconut milk • 1 tsp cinnamon • 1/4 tsp nutmeg • 1/2 tsp salt • 1 tsp vanilla bean paste Blend until smooth and pour into cooled tart shell. Bake 375°F for 20 min until just set. Hotteok Crumble • 1/3 cup light brown sugar • 1 tbsp AP flour • 1/2 tsp cinnamon • pinch of salt • 2 tbsp cold Kerrygold butter • 3/4 cup chopped peanuts (or walnuts) Cut the butter into the dry mix until crumbly, then stir in the nuts. Top tart + bake another 40–45 min. Cool before slicing. BROWN BUTTER RUM COQUITO (~6 servings) 1 can Evaporated milk 1 can of Coconut milk 1 can Cream of coconut 1 can Condensed milk 1/2 Tsp vanilla extract Pinch of salt 1 can Coconut milk 1 Cinnamon stick 2 Cloves 1 Cardamom pod Brown Butter Rum: Brown 1/2 cup of salted Kerrygold butter until toasty and fragrant. Add to 1 1/2 cups of gold rum (making sure to add all browned butter bits). Shake and let infuse on the counter for 2 hours. Freeze overnight and strain out butter through sieve and then coffee filters #dessert #cocktails #holidayrecipes
