Why did nobody tell me chicken pot pie is the greatest dish for this weather? I’m genuinely mad at all of you. I’ll be honest, I almost bought pie dough at the supermarket… until I saw the price. Twenty dollars for something I can make in seconds, without unnecessary preservatives, and that tastes better? Yeah. No. We’re making it with @Organic Valley butter, a homemade crust, that’s actually worth the effort. I took everything I love about chicken stew and turned it into a pot pie: leeks, artichokes, peas, chicken, fresh lemon juice, preserved lemon, all baked under flaky, golden layers. I cut the dough into small squares so every bite gets its own crust moment. Easy, fun, and honestly? It eats like individual pot pies once served. The filling gets a splash of OV heavy cream, and the crust is finished with an OV egg for that shiny, golden egg wash. Cozy food, done right. I even made a small batch to freeze- because nothing beats opening the freezer on a cold day and thanking your past self for putting in the effort. Perfect dish for this stormy weekend.
