Could be wrong but you probably need to trim the stems frequently to keep energy going to the potatoes instead of above ground

when planting potatoes I do a process called hilling. when a potato grows stems you keep covering up the bottom. you do this so the potato can grow bigger and larger potatoes when you harvest
