1 medium garnet sweet potato, peeled & thinly sliced
 * 
1 medium Japanese purple sweet potato or stokes purple sweet potato, peeled & thinly sliced
 * 1 cup pearl onions, peeled and cut in half * 1/2 cup parmesan cheese, grated * 
2 tbsp butter to butter baking dish, room temperature 
 Sauce—  * 3 tbsp KEWPIE MAYO * 1 1/2 cup whole milk * 1 1/2 cup cheddar or gruyere cheese, shredded  * 1 cup parmesan cheese, grated * 3 tbsp butter * 1 1/2 tbsp all-purpose flour  * 2 tsp fresh thyme, stemmed * 1 tsp kosher salt  * 1 tsp miso paste  * 1/2 tsp garlic powder * 1/2 tsp onion powder  * 1/4 tsp black pepper  * 4-5 sprigs of fresh thyme  * Optional: chives, finely chopped for garnish  1. In a small saucepan, melt butter then slowly add flour to make a roux. Cook for 2-3 mins. Slowly pour milk and whisk continuously to get rid of any clumps. 
 2. Season sauce with salt, miso paste, garlic powder, onion powder, and black pepper. 
 3. Whisk in both cheddar and parmesan cheese until smooth. 
 4. Add thyme, mix well and turn off the stove. Set aside.
 5. Clean and scrub potatoes thoroughly. Using a mandolin, carefully slice potatoes into 1/8 inch rounds. Peel pearl onions and cut in half. 
 6. Preheat the oven to 375F. In a dutch oven or baking dish, (2.5-3 quart size), thinly coat the surface with butter. 
 7. Layer half the sauce and spread evenly at the bottom of the baking dish. 
 8. Layer potatoes evenly into the dish, separating potatoes by color in each row until all potatoes are used. Evenly place pearl onions around the potatoes. Cover everything with the rest of the sauce. Evenly spread it out. Top with a few sprigs of fresh thyme. 
 9. Cover with lid or foil and bake for 35-40 mins. Or until potatoes are softened and sauce is bubbling.
 10. Remove the dish from the oven and uncover. Top with a thin layer of parmesan cheese. Leave uncovered and put it back into the oven for another 12-15 minutes or until it forms a golden crust.
