diy reese’s peanut butter cups! they’re gluten free, dairy free, and refined sugar free, and sooooo good. ingredients •1/2 cup natural peanut butter •2 tbsp pure maple syrup or raw honey •2 tbsp coconut flour •1/2 tsp salt (if using unsalted peanut butter) •1/2 cup dark or semi-sweet chocolate chips (i used dairy free and refined sugar free) instructions 1. line 8 regular muffin tins with paper liners (or 24 mini muffin tins). 2. melt your chocolate in the microwave or on the stovetop using the double boiler method then brush/paint the bottom of the paper liners with melted chocolate (i painted the chocolate 1/3 way up the liners using a pastry brush). 3. place in the fridge until the chocolate completely hardened. while the chocolate hardens, make the peanut butter filling. 4. add the peanut butter, honey or maple syrup, coconut flour, and salt to a small dish and mix well. the mixture should be firm and hold together. if it’s too runny, add more coconut flour. if it’s too stiff, add more peanut butter or sweetener. 5. once the chocolate layer is hardened, remove from the fridge and place a spoonful of peanut butter filling over the chocolaye. gently press the peanut butter filling down and smooth it out so it touches all of the sides of the cupcake liner. 6. spoon the remaining melted chocolate over the peanut butter layer (you may need to reheat it first). 7. place the peanut butter cups back in the fridge until everything is hardened, at least 1 hour. 8. enjoy straight from the fridge! store in the fridge or freezer. #reeses #reesespeanutbuttercups #reesescups #peanutbuttercups #healthyreeses #homemadecandy #glutenfreedessert #dairyfreedessert #refinedsugarfree #vegandessert #healthydessert
