This popular ramen stall keeps the feel of an old-style yatai while serving additive-free Hachioji ramen. The close distance of the stall and the cooking process, with each bowl finished right in front of you, are also part of its appeal. This time, we featured the Chashu Men. It is a bowl with soy sauce soup, medium-thin straight noodles from Tamura Seimen, chopped onion, spinach, nori, and homemade chashu. The texture and sweetness of the chopped onion, typical of Hachioji ramen, go well with the clean soy sauce soup. The homemade chashu is moist and tender, with a gentle sweetness from the fat. Pouring the kaeshi, boiling the noodles, draining them, and carefully adding the toppings are all part of the scene. This is street stall ramen you can enjoy at night in Takao.
