Short Rib Ragu Ingredients 1–1.5 kg beef short ribs Salt & freshly cracked black pepper 2–3 tbsp neutral oil 1 medium onion, finely diced 2 medium carrots, finely diced 4 celery stalks, finely diced 4 garlic cloves, finely chopped 2 tbsp tomato paste 1 tbsp gochujang 1 tbsp balsamic vinegar 2 tbsp Worcestershire sauce 1 shot espresso, optional 2 cups tomatoes, canned or fresh 2 cups dry red wine 1 L beef stock, divided 2 bay leaves A few sprigs fresh thyme For serving: Pasta of choice Parmigiano-Reggiano Butter, optional Fresh parsley, finely chopped Instructions 1. Preheat oven to 350°F (175°C). Generously season the short ribs with salt and pepper. Heat oil in a Dutch oven over medium heat and sear the beef until deeply browned on at least two sides. Remove and set aside. 2. Add the onion, carrots, celery and garlic to the same pot and cook for about 5 minutes. Add the tomato paste and gochujang and cook for another 2 minutes. 3. Add the balsamic vinegar, Worcestershire, optional espresso, tomatoes, red wine and about 3 cups of the beef stock. Return the beef to the pot. Tie the bay leaves and thyme together with kitchen twine and add them in. Bring everything back to a boil. 4. Top with a parchment cartouche (optional but recommended), cover with the lid and braise for 3–3½ hours. Check a couple times throughout and add more stock or water if it’s getting too dry. 5. Remove from the oven and let the beef rest in the braising liquid for 20–30 minutes without stirring. Remove the herbs, then break apart the beef and mix everything together. 6. Adjust the consistency as needed: if there’s too much liquid, simmer to reduce; if it’s too dry, add a splash of stock or water. Taste and adjust with salt, pepper and, if needed, a splash of red wine vinegar or squeeze of lemon. 7. Cook your pasta in heavily salted water until al dente. Add some ragù to a pan over medium-low heat, add the pasta and gradually mix in pasta water until everything comes together. 8. Finish with a generous amount of Parmigiano-Reggiano and, optionally, a knob of butter.
