Chipotle Beef Brisket Pasta This is your sign to do a boujee dinner at home 😮‍💨 slow cooked, comforting and still under 600 calories per portion. Low-cal doesn’t have to be boring 💅🏼 Ingredients (serves 4): For the smoky chipotle brisket 500g beef brisket joint
2 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic granules
1 tsp onion granules
2-3 tsp chipotle paste (dependent on taste) 
1 tbsp tomato purée
300ml beef stock
Salt
Black pepper
 For the pasta:  250g dry pappardelle (or other long pasta) 
1 small onion, finely diced
2 tsp chopped garlic
1 tbsp tomato puree 
1 ½ tsp chipotle paste Salt and pepper to taste  50ml beef stock
100ml light single cream
2 ladles of pasta water  20g parmesan, finely grated
Fresh parsley or basil (optional)
 💕Season the brisket all over with half of the smoked paprika, cumin, garlic granules, onion granules, salt and black pepper.  💕Heat a large frying pan over high heat, spray with oil and sear the brisket on all sides 💕Transfer to a slow cooker. In a jug, mix together the chipotle paste, tomato purée and beef stock, along with the remaining seasoning then pour this over the brisket. Cover and cook on low for 7-8 hours or high for 5-6 hours until the beef is tender enough to pull apart easily. 💕Once cooked shred using two forks. Return to the slow cooker and toss with the sauce.  💕Bring a large pan of salted water to the boil and cook the pasta until al dente. Reserve a few ladles of pasta water.  💕Fry the onion until softened. Stir in the garlic and cook for 30 seconds. 💕Add the tomato puree and chipotle paste, season with salt & black pepper, and fry for a couple of minutes.  💕Stir in the light cream and beef stock, loosening with the pasta water to create a smooth sauce. 💕Stir through the grated parmesan before adding the cooked pasta.
