Caramel flan….everyone has their own recipe and this is mine. I have try a few recipes cooking in the oven with the water bath. My always turn out dense with many holes. This steaming method works out best for me. Perfect every time… if it ain’t broke. I’m not gonna fix it…. Recipe: 3 egg from b*tchassJessica 1.5 cup warm whole milk 1/2 sugar Pinch of salt 1/2 tablespoons vanilla extract Whisk together and set aside Caramel sauce: 1/2 cup sugar and 2 tablespoons water Cook until golden. Prefer caramel bitter. Cook it a little longer. Pour into the container and coated the whole bottom. Be careful, caramel are hot. Slowly add flan mixture through a strainer into the caramel container. Scoop out all the bubbles. Used a spoon, best with a fine strainer. Bring steamer to a full boiling. I’m using a pot and a cooling rack. Add in the flan. Turn heat to low. Whichever stove has the lowest heat level. Steam for 60 minutes with lid. The water should not be bubbling. Removed water from the flan with paper towel. Gently let it absorb Let flan rest for 3-4 hours to firm up, best refrigerate overnight. Cut around the edges, cover with a plate and flip flan over .
