Croissant Loaf Ingredients * 300 g flour (≈ 2½ cups) * 159 g milk (≈ ⅔ cup) * 25 g egg (about ½ egg) * 35 g sugar (≈ 3 tbsp) * 25 g butter (2 tbsp) * 4 g instant yeast (≈ 1 tsp) * 1 tsp salt * 150 g butter (≈ ⅔ cup) (for laminating) Instructions 1. In a bowl, add all the ingredients except the salt and butter, then mix. Add the butter and salt, then knead for about 5 minutes until smooth and elastic. Cover and refrigerate for at least 6 hours. 2. Roll the 150 g butter into a soft square (pliable, not melted). Enclose it in the dough and do one double fold. Rest for 20 minutes in the fridge. Roll again and do one simple fold. Rest for 1 hour in the fridge. 3. Roll the dough out, not too thin, into a rectangle. Cut it into 15 to 20 equal squares. 4. Arrange the squares in a lined loaf pan. Cover and proof for about 2 hours, until puffy. 5. Bake at 400°F for 5 minutes, then reduce the heat to 375°F and bake for about 20 minutes, until deeply golden. #croissant #bread #baking #breadtok #pastry
