@cass.spinelli: Street Corn Beef Bowls 🌽 SO easy & so yummy - adding to my weekly dinner rotation Ingredients: * 2 large sweet potatoes, diced * Olive oil * Salt and pepper * Garlic powder * 1 lb ground beef * Taco seasoning * 1(15oz) can of sweet corn, drained * 1 jalapeno, diced & seeds removed * 2 tbsp chopped cilantro * 2 tbsp Greek yogurt (or sour cream) *2 tbsp mayo * Juice of 1/2 lime * 2 tbsp Cotija cheese * Chile lime seasoning * Avocado for serving Instructions: Preheat oven to 425F Line a baking sheet with parchment paper & add the diced potatoes. Toss with 1 tsp olive oil, salt, pepper, garlic powder. In the oven for 30-35 minutes. Brown your ground beef & season with taco seasoning. Create the street corn mixture by combining the corn, jalapeno, cilantro, Greek yogurt, mayo, lime juice, cheese, & chile lime seasoning to taste in a small bowl. Assemble your bowls by layering the sweet potatoes, ground beef, and street corn mixture.
