Easy, cozy, and baked until golden perfection 😌🌮 ⸻ INGREDIENTS ✨ For the Taco Tofu: • 1 tbsp oil • 1/2 onion, diced • 1 bell pepper, diced • 3 garlic cloves, minced • Pinch of salt • 1 block extra-firm tofu, crumbled • 2 tbsp tomato paste • 1–2 tbsp taco seasoning • 1 cup water • 1 tsp cornstarch For the Creamy Salsa Dipping Sauce: • 1/2 cup vegan mayo • 1/4 cup salsa • 1 tbsp apple cider vinegar • 1/2 tsp garlic powder • Salt to taste For the Tacos: • Corn tortillas • 1 cup shredded vegan cheese • Shredded lettuce • Diced tomatoes ⸻ DIRECTIONS ✨ 1. Preheat oven to 425°F. 2. Sauté onion, bell pepper, garlic, and salt for 5 minutes. Add tofu and cook for 2 minutes. 3. Stir in tomato paste, taco seasoning, water, and cornstarch. Simmer for 10 minutes until thickened. 4. Blend all Creamy Salsa Dipping Sauce ingredients until smooth. 5. Line a baking sheet with parchment and drizzle with oil. Add tortillas, vegan cheese, and about 2 tbsp tofu mixture to each. 6. Fold over or leave open, then gently flatten. Bake for 12–15 minutes, flipping halfway through, until crispy. 7. Top with lettuce and tomatoes.
