Base: • 2 × 140g packs of plain goat cheese • 1/3 cup plain Greek yogurt (or cottage cheese) • 1 tbsp olive oil • 1/2 lemon, juiced • 1 tbsp honey Peach Topping: • 1 peach, finely diced • 1 tbsp butter • 1 tbsp brown sugar • Pinch of sea salt •1/4 cup honey roasted pistachios, chopped To Finish: • Hot honey • Maldon salt • Fresh thyme • Crushed pistachios Instructions: 1. Add all base ingredients to a food processor and blend until smooth and creamy. 2. In a pan over medium heat, melt butter then add peaches, pistachios, brown sugar, and sea salt. Cook until peaches are soft and caramelized. 3. Spread the whipped goat cheese onto a plate or bowl, spoon the warm peach topping over, then finish with hot honey, Maldon salt, fresh thyme, and crushed pistachios. 4.
