Cook the pasta: Bring a large pot of heavily salted water to a boil. Cook the spaghetti until al dente. Reserve at least 250ml pasta water before draining. 2. Build the sauce: Add the olive oil to a large pan over medium heat. Add the sliced garlic and chilli flakes. Cook gently until the garlic turns lightly golden. Do not let it burn. 3. Emulsify: Add the cooked pasta directly to the pan. Add a splash of pasta water. Toss continuously until the oil and water form a silky sauce. 4. Finish: Remove from the heat. Stir through the chopped parsley. Taste and adjust seasoning if needed. 5.
