@purewow: This potato salad deserves a permanent spot at every summer gathering. ☀️🥔 Summer Potato Salad: -2 lbs. yellow potatoes, washed & sliced in half -6 oz. pancetta, cooked until crispy -1/3 cup sun-dried tomatoes, chopped -4 green onions, thinly sliced -roasted corn & tomatoes -herb mayo dressing -grated parmesan, lemon zest & sliced green onions for garnish 1. Boil potatoes until fork tender. Drain, then allow to cool. 2. In a large bowl, add potatoes, green onions, pancetta, sun-dried tomatoes, roasted corn/tomatoes and dressing. Gently mix to combine. 3. Transfer to a serving dish, then garnish with sliced green onions, lemon zest and grated parmesan. Roasted Corn & Tomatoes: -1 cup frozen corn -1 cup cherry tomatoes -1 tbsp. olive oil -1.5 tsp. smoked paprika -salt & pepper 1. Preheat oven to 425°F. 2. Spread the frozen corn and cherry tomatoes on a large baking sheet. 3. Drizzle with olive oil and season with salt, pepper, and smoked paprika. Toss to coat evenly. 4. Roast for 20–25 minutes, stirring halfway through. Herb Mayo Dressing: -3/4 cup mayo -1 tbsp. Dijon -1 tbsp. lemon juice -1 garlic clove, minced -2 tsp. dried parsley -1 tsp. dried basil -1 tsp. dried chives -salt & pepper 1. Whisk all ingredients together until smooth. 2.
