Just because it’s winter, that doesn’t mean we can’t still enjoy fresh and bright flavors! 🍅  I put together this ever so delicious and super easy to make Bulgur Greek Salad! All of my favorite Mediterranean flavors are here. I decided to add bulgur wheat due to its quick cooking time, and I just love the flavor of it! 🌾  This is a great salad to even make on a Sunday to enjoy throughout the week for lunch! 🥗  Ingredients 🛒 • 1 cup uncooked bulgur • 1.5 cups chicken stock or water • 1 cup cherry tomatoes, halved • 1 cup Persian cucumbers, sliced • 1/4 cup red onion, diced • 1/3 cup Kalamata olives, halved • 6oz feta cheese • 1 cup parsley, chopped • 1 (14.5 oz) can of chickpeas, drained and rinsed • Salt and black pepper, to taste • Zest and juice of 1 lemon • 1 tbsp red wine vinegar • 4 tbsp extra virgin olive oil • 1/2 tsp dried basil • 1/2 tsp garlic powder • 1/2 tsp dried oregano • 1/2 tsp dried mint • 1/2 tsp dried dill Directions ✍️ • Into a medium saucepan, add in the stock or water and bring to a boil. Once boiling, add in the bulgur and cook for 12 minutes. After it has cooked, remove it from the heat and allow to sit for 5 minutes before placing it into a large mixing bowl. • After the bulgur has cooled, add in the tomatoes, cucumbers, onion, olives, feta, parsley, and chickpeas. • Salt and pepper, then toss the mixture. • To make the dressing: Into a mason jar add the zest and juice of a lemon, red wine vinegar, olive oil, basil, garlic powder, oregano, mint, dill, and salt & pepper, to taste. Shake up to mix dressing. • Pour the dressing over the salad and toss thoroughly. Allow the salad to marinade for at least 1 hour before eating. • Serve up and enjoy!
