Feta & Parm-Crusted Roasted Potatoes  Serves 6-8 There will NEVER be enough ways to enjoy feta in my kitchen, and this is a new favorite. I’ve been seeing lots of smashed potatoes on my feed, but I love a more classic roasted potato for ease of preparation, unbeatably crispy exterior and creamy, velvety center.  1/3 cup crumbled feta 4 medium russet or Idaho potatoes (2 1/4 pounds) 1 teaspoon baking soda 4 tablespoons olive oil  1 teaspoon Kosher salt 1/2 teaspoon sweet paprika  6 garlic cloves, minced  Freshly ground black pepper, to taste  1/2 cup finely grated Parmigiano‐Reggiano cheese 2 teaspoons za’atar spice blend Spread the feta out on a towel-lined plate for 5 minutes to absorb any excess moisture. Preheat the oven to 450°F. Cut the potatoes into 1 1/2-inch thick rounds.  Add the potatoes to a 5- or 6-quart pot and cover with 2 inches cold water. Add the baking soda, cover (this helps with crispiness later!), bring to a boil over high heat, uncover, and cook until the potatoes are firm but can be partially pierced with a fork, 8-9 minutes; drain and dry the potatoes.  Whisk 2 tablespoons of the olive oil, 1/2 teaspoon salt and the paprika in a large bowl, add the potatoes and toss to coat. Combine the remaining 2 tablespoons oil and the garlic in an 8- x 10-inch baking dish (or 9-inch square), spreading the garlic as evenly as possible in the dish; don’t worry if it’s not perfectly uniform!  Sprinkle the remaining 1/2 teaspoon salt evenly over the oil and garlic and season with pepper to taste. Sprinkle the parmsean over the oil, then arrange the potato rounds on top. Scatter the feta in between the potatoes. Season with salt. Bake until potatoes are roasted and golden and the cheese is crisp, 30-35 minutes. While still hot, sprinkle with za’atar.
