Ingredients: - 2 tablespoons olive oil - 1 tablespoon butter - 1 large onion, chopped - 2 cloves garlic, minced - 2 tablespoons tomato paste - 1 can (28 oz) crushed tomatoes - 1 cup heavy cream - Salt and pepper, to taste - 4 slices of good quality bread - 1 cup shredded cheese (your choice, such as cheddar and asiago) Instructions: 1. Heat olive oil and butter in a pot over medium heat. 2. Sauté the chopped onions and minced garlic until softened. 3. Add tomato paste and cook for a few minutes, allowing sugars to caramelize. 4. Stir in the can of crushed tomatoes and bring to a simmer. 5. Add heavy cream and stir until well combined. 6. Blend the mixture with an immersion blender until smooth. 7. Season the bisque with salt and pepper to taste. 8. Preheat oven to melt the cheese. 9. Shred your choice of cheeses. 10. Spread cheese evenly on slices of bread. 11. Melt cheese-topped bread in the oven until bubbly and melted. 12. Sandwich the bread together and grill on a cast iron pan until golden brown on both sides. 13.
