🌮 Crispy Honey Buffalo Chicken Tacos with Avocado Crema Ingredients For the Chicken Marinade: 6 boneless, skinless chicken thighs 1 tbsp olive oil 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder ½ tsp salt ½ tsp black pepper For the Honey Buffalo Sauce: 80ml buffalo hot sauce 1½ tbsp honey 1 tbsp melted butter For the Avocado Crema: 1 ripe avocado Small handful fresh coriander Juice of 1 lime 1 deseeded small green chilli 2 tbsp sour cream Salt to taste Splash of water (if needed) For the Tacos: 8–10 mini tortilla wraps 150–200g grated mozzarella (or cheddar/mozz mix) Method 1. Add a splash of water if needed to loosen it to a drizzle consistency. Taste and adjust lime or salt. 4. Cook the Chicken Heat a pan over medium-high heat. Cook the marinated chicken thighs for 5–6 minutes per side until golden, slightly charred and cooked through. Toss the sliced chicken in the honey buffalo sauce until fully coated. 5. Assemble & Crisp the Tacos Lay the mini tortillas flat. Sprinkle cheese onto one half of each tortilla. Add a generous spoonful of honey buffalo chicken on top. Fold over into a half-moon shape. Toast in a dry pan over medium heat for 2–3 minutes per side until golden and crispy and the cheese has melted. Press gently with a spatula for extra crispiness. 6.
